Avocados are made up of about 77% monounsaturated fats. This kind of fat is considered good as it helps lower your cholesterol. Good fats can also reduce your chances of developing cardiovascular disease which means a lower chance of artery blockages, heart attack, stroke and blood clots. Monounsaturated fats can also help your body absorb nutrients making all those great things inside an avocado even more accessible to your body. Seems like avocado is powerhouse food!

After mixing the avocado into the chicken salad, we also add cilantro and parsley, tow herbs that you may not usually associate with chicken salad. However, the avocado already gives the chicken salad a Mexican like flare so adding these herbs just makes that taste even more present. Cilantro has a fresh, citrus like taste while parsley has a mild, bitter taste that adds a little bite to the salad.

Keto Pesto Chicken Salad

We also decided to chop up a few black Kalamata olives to the salad to give it some beautiful color and a wine like flavor. Most Kalamata olives are brined in a red wine vinegar which gives them this distinct taste that helps make our chicken salad even more unique.

Mixing this innovative chicken salad together only takes a matter of minutes and it is also something you can prepare ahead of time, making a large batch to last you the entire week. If you do choose to make a nice big bowl of pesto chicken salad, consider adding the avocado in the day you plan to enjoy the dish. This will prevent it from turning brown and keep that nice green color.

Ingredients
  • 2 5 ounce cans shredded chicken breast
  • 2 medium avocados pitted and diced
  • 2 tablespoons mayonnaise
  • 2 tablespoons Fresh chopped cilantro
  • 1 tablespoon fresh chopped parsley
  • 1 cup finely diced celery
  • 1/4 cup kalamata olives sliced
  • 2 tablespoons diced yellow onion
  • salt and pepper
Instructions
  1. Drain the chicken and shred it into a medium mixing bowl.
  2. Stir in the diced avocado, mashing as you stir.
  3. Add the remaining ingredients and stir well.
  4. Season with salt and pepper to taste then chill until ready to serve.
