Ingredients
  • 1 large eggplant
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh grated Parmesan cheese
  • 1/4 cup almond flour
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 large egg (beaten)
  • salt and pepper
Instructions
  1. Preheat the oven to 350°F and line a baking sheet with parchment.
  2. Slice the eggplant into 8 thick slices and place them on the baking sheet.
  3. Sprinkle with salt and pepper then bake for 10 to 15 minutes or until browned.
  4. Combine the mozzarella cheese, Parmesan cheese, almond flour, oregano, and thyme in a bowl.
  5. Flip the eggplant slices and bake until just browned again.
  6. Brush the eggplant slices with beaten egg then sprinkle with the cheese mixture.
  7. Bake until the cheese is melted and browned, about 10 minutes, then serve hot.
