You'll be happy to learn it only takes about 15 minutes of prep and 15 minutes of cook time before you can serve up this perfect addition to your meal. Unlike traditional dinner rolls, there is no waiting for the dough to rise since there is no yeast! All you need to do is mix the ingredients together, form your rolls, and bake! So much faster than making any other kind of roll you may have tried in the past.

The roll itself is comprised of herb, flaxseed, cream cheese, mozzarella, and almond flour, but the real treat is what's brushed on top of it! The flavorful mixture of butter, thyme, and rosemary adds a delicious pop of flavor. If you want to try using different kinds of herbs, you definitely can. Dried basil, oregano, and parsley would all work great with these rolls. You could also make a spicy version by adding a pinch of cayenne pepper to the butter mix. Each time you make this recipe, give a new herb a try. Since herbs are fairly low in carbs and you use such a small quantity anyway, you can freely experiment with the taste without worrying about breaking your keto diet!

Before you pop the rolls into the oven, you have to make them look, well, roll-like. Simply roll out the dough into a log, cut into six similar pieces, and then roll each piece into a ball. That's it! Each one will be perfectly portioned and it only takes a few seconds to roll into a ball. You can also make mini breadsticks if you'd like! If the dough is a little sticky, sprinkle your counter with some extra almond flour to help form the dough balls.

Ingredients
  • 1 cup shredded mozzarella cheese
  • 1 ounce cream cheese (softened)
  • 1 cup almond flour
  • 6 tablespoons ground flaxseed
  • 1/2 teaspoon baking powder
  • 1 teaspoon fresh chopped rosemary (divided)
  • 1/2 teaspoon fresh chopped thyme (divided)
  • 1 large egg (whisked)
  • 1 tablespoon butter (melted)
  • 2 cloves minced garlic
Instructions
  1. Preheat the oven to 400°F and line a baking sheet with parchment.
  2. Place the mozzarella and cream cheese in a microwave-safe bowl.
  3. Microwave on high heat in 30-second increments until completely melted, stirring well in between.
  4. Add the almond flour, ground flaxseed, and baking powder.
  5. Stir well while sprinkling in half the fresh herbs, scraping the sides of the bowl as you stir.
  6. Add the egg and stir to combine then knead until the dough is soft and sticky.
  7. Roll out the dough into a log and cut into six even pieces – roll each piece into a ball.
  8. Place the dough balls on the baking sheet and set aside.
  9. Stir the remaining rosemary, thyme, and garlic into the butter then brush half of it over the dough balls.
  10. Bake for 12 to 15 minutes until just browned then brush with the remaining butter to serve.
