Ingredients
  • 8 large eggs (whisked)
  • 1/4 cup whole milk
  • 6 slices bacon (chopped)
  • 2 cups fresh sliced spinach
  • 2 cups sliced mushrooms
  • 1 cup diced tomatoes
  • 1/2 cup canned enchilada sauce
  • 1 cup shredded Monterey jack cheese
  • Cooking spray
  • salt and pepper
  • Chopped avocado (to serve)
  • Fresh chopped cilantro (to serve)
  • sour cream (to serve)
Instructions
  1. Preheat the oven to 350°F and grease a square glass baking dish with cooking spray.
  2. Beat the eggs and milk until frothy then season with salt and pepper.
  3. Grease a small skillet with cooking spray and set over medium heat.
  4. Add ¼ cup of the egg mixture and swirl the pan to spread the egg.
  5. Cover and cook for 4 to 5 minutes until the eggs are set and firm like a tortilla.
  6. Remove the egg tortilla to a plate and repeat with the remaining egg mixture.
  7. Cook the bacon in a skillet over medium-high heat until crisp then remove to paper towels.
  8. Reheat 2 tablespoons of the bacon fat and toss in the spinach, mushrooms, and tomatoes.
  9. Cook for 3 minutes then season with salt and pepper.
  10. Lay the egg tortillas out flat on a cutting board and spoon the spinach filling down the middle.
  11. Sprinkle each with bacon then roll up the tortillas.
  12. Spoon a layer of enchilada sauce in the prepared dish then add the enchiladas.
  13. Drizzle with the remaining sauce then top with cheese and bake for 15 minutes until melted.
  14. Garnish with chopped avocado, cilantro, and sour cream to serve.
