Ingredients
  • 1 tablespoon olive oil
  • 2 pounds ground beef (80% lean)
  • 1 small yellow onion (chopped)
  • 3 cloves minced garlic
  • 4 cups beef broth
  • 1 (15-ounce) can pumpkin puree
  • 1 teaspoon dried oregano
  • 10 ounces fresh spinach (chopped)
  • 1 1/2 cups shredded mozzarella cheese
  • salt and pepper
Instructions
  1. Heat the oil in a large stockpot over medium heat.
  2. Add the ground beef, onion, and garlic and cook until the beef is browned, breaking it up with a wooden spoon.
  3. Stir in the beef broth, pumpkin, and spices then bring to a boil.
  4. Reduce heat and simmer, covered, for 20 minutes.
  5. Stir in the spinach and simmer for another 10 minutes then adjust seasoning to taste.
  6. Spoon into bowls and top with shredded mozzarella to serve.
