Ingredients
  • 4 large zucchinis
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cottage cheese
  • 6 tablespoons mayonnaise
  • 1 large egg
  • 4 green onions (sliced thin)
  • 2 cloves minced garlic
  • 1 teaspoon dried oregano
  • salt and pepper
Instructions
  1. Slice the zucchini as thin as possible then sprinkle with salt and set aside for 30 minutes to drain.
  2. Preheat the oven to 350°F and grease an 8x8-inch square baking dish with cooking spray.
  3. Rinse the zucchini and pat dry then place it in a large bowl.
  4. Toss in the feta cheese, cottage cheese, mayonnaise, egg, and green onion.
  5. Sprinkle with garlic, oregano, salt and pepper then toss to combine.
  6. Spread in the baking dish and bake for 35 to 40 minutes until hot and bubbling.
