Ingredients
  • 1 tablespoon olive oil
  • 1 small yellow onion (chopped)
  • 4 boneless chicken thighs (chopped)
  • salt and pepper
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 cloves minced garlic
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • 1 large zucchini (spiralized)
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
Instructions
  1. Heat the oil in a large cast-iron skillet over medium heat.
  2. Add the onion and sauté for 5 to 6 minutes until softened then remove to a bowl.
  3. Reheat the skill and add the chopped chicken – season with salt and pepper.
  4. Sauté for 5 to 6 minutes until the chicken is browned then remove to a bowl with the onions.
  5. Add the cream, Worcestershire sauce, mustard, garlic, and pepper to the skillet.
  6. Bring to a boil, scraping up the browned bits with a spoon, then simmer for 7 to 8 minutes to thicken.
  7. Add the cooked chicken and onions along with the parmesan cheese and simmer for 2 minutes.
  8. Meanwhile, cook the zucchini noodles in a separate greased skillet over medium heat then drain on paper towels.
  9. Spread the diced tomatoes and cooked zucchini noodles in an 8x8-inch baking dish.
  10. Top with the chicken and cream sauce then sprinkle with cheddar cheese.
  11. Broil for 3 to 4 minutes until the cheese is melted and browned then serve hot.
