Ingredients
  • 1 pound ground beef (80% lean)
  • 1 pound ground pork sausage
  • 1 cup shredded zucchini (squeezed to remove moisture)
  • 3 cups shredded mozzarella (divided)
  • 1/2 cup grated parmesan cheese (divided)
  • 1 large egg (whisked)
  • 3 cloves minced garlic
  • 2 teaspoons dried basil
  • 1 cup no sugar added pasta sauce
  • salt and pepper
Instructions
  1. Preheat the oven to 400°F and lightly grease a 9x13-inch glass baking dish with cooking spray.
  2. Combine the beef, sausage, zucchini, 1 cup mozzarella, and ¼ cup parmesan in a mixing bowl.
  3. Add the egg, garlic, and spices then stir until well combined.
  4. Shape the mixture into 24 meatballs and arrange them in the baking dish.
  5. Bake for 30 minutes until the meatballs are done then drain the liquid from the dish.
  6. Pour the sauce over the meatballs and top with the remaining cheese.
  7. Bake for 10 to 15 minutes until the cheese is melted then broil for a few minutes to brown it.
