Check out this easy tex-mex casserole recipe!

Everybody appreciates a delicious casserole recipe! There's just nothing quite like the ease of tossing all your favorite ingredients into a single pot. Not only does this particular recipe taste great, but it can also be cooked up in as little as thirty minutes! Even if you're running short on time, you can still enjoy a low carb meal. This dish is definitely going to be the new item on the “Taco Tuesday” menu. Maybe we should switch Tuesday to be “Tex Mex Casserole Tuesday”…

Easy Low Carb Tex-Mex Casserole

Sometimes, people assume that a keto-friendly diet means that you have to skip out on delicious flavor. That is absolutely not true! Instead, you should focus on meals that are high in healthy fats, low in carbs, and have adequate protein. This recipe is an excellent example of how you can still enjoy yourself without sacrificing your diet plan. Not many other diets out there would allow you to enjoy such an amazing, flavorful, cheese-loaded meal! Hurray for Keto!

The flavors found in this meal are second to none. Chili powder, ground cumin, and paprika are the primary spices in this tasty dish. However, it's the little extras such as the crushed tomato, sour cream, and pepper jack cheese that will definitely send your taste buds into overdrive. If you really want to turn up the heat, then don't skip the jalapeno! You can even add some more jalapeno if you'd like!

If you do not have all the spices on hand or want an easier spice option, you can use a tablespoon of taco seasoning in place of the cumin, chili powder, and paprika. Taco or fajita seasonings that come pre-mixed are essentially the same as the blend we use in this recipe. A pre-mixed seasoning makes this recipe even easier and faster to make. Just be sure the seasoning mix that you buy doesn't have any sugar added- we want to keep the recipe keto-friendly!

You can also use a cup of fresh chopped tomatoes in place of the crushed canned tomatoes if needed. Be sure to just use the cup of tomatoes as directed in the recipe- too many may also throw off the keto balance. Another simple, low carb substitute that we have used in this dish is to replace the ground beef with ground turkey or ground chicken. As you can see, there are tons of crafty ways to make this delicious tex-mex casserole recipe.

If you're looking for a delicious tex-mex inspired meal without the effort, then this recipe is a must-try. It has all your favorite flavors without spending too much time in the kitchen. In just a few minutes you can be sitting down to a plate of this incredible all-in-one meal!

Meals like this are perfect for feeding a family or if you plan on having leftovers for the rest of the week. This particular recipe makes six servings, so there's plenty to go around! No matter the occasion, you will definitely thank yourself for whipping up this scrumptious meal at home.
