Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1-2 tablespoons fresh lime juice
  • 2 chipotle chilis in adobo
  • 1 pound ground beef (80% lean)
  • 1/4 cup finely diced pepperoni
  • salt and pepper
Instructions
  1. Combine the mayonnaise, sour cream, lime juice, and chipotle peppers in a blender.
  2. Blend until smooth then pour into a small bowl.
  3. Combine the ground beef, pepperoni, salt, and pepper in a bowl and stir well.
  4. Shape the mixture into 36 small balls by hand then place on a parchment-lined baking sheet.
  5. Bake for 10 to 15 minutes at 350°F until browned and cooked through, turning as needed.
  6. Serve the pepperoni bites hot with chipotle mayo for dipping.
